2-3 large peeled potatoes cut in 1-1.5 cm-thick slices
3 medium-sized zucchini cut in 1-1.5 cm-thick slices
3 onions thinly sliced
4 small eggplants, cut into 2-2.5 cm-thick slices
3 small green bell peppers, cut in large pieces
a bunch of fresh parsley, roughly chopped
4 medium-sized tomatoes, chopped roughly
250 ml extra virgin olive oil
a tablespoon of tomato paste, diluted in 350 ml water
sea salt and freshly ground black pepper
chilli pepper, oregano, cumin or any other preferred dry spices
Mix all the ingredients in a large bowl very well, coating all the vegetables. Pour everything into a large baking pan.
Place the baking tray in the oven on high heat (about 220C). Cook the briam for 2 hours, until all the vegetables are crispy.
Sprinkle some cheese over everything towards the end of baking time, or add some chopped sausage.
